East Pole La Pastora Beans

East Pole Coffee Co is not only a coffee shop in Atlanta, but a large distributer and roaster of coffee beans to many coffee shops in the Atlanta area including Cafe Comma (Vinings Atlanta), HoneySuckle Biscuits and Bakery (Kennesaw), and Noble and Main (Cartersville). With many different types of wholesale beans, I bought the La Pastora beans from Cafe Comma. The beans come from Tarrazu, Costa Rica and are made through the wash process. What is the wash process? I asked myself this and decided to do some research!! Coffee processing is the process of removing of the fruity layers that encompass the taste of the coffee. However, there are different ways and steps that one can remove these layers that impact the taste of the coffee. The two biggest steps to processing coffee are removing the fruit, and drying the coffee. In natural coffee, the fruit is removed after drying, but with wet coffee, the fruit is removed before drying. Natural coffee is going to incorporate more of a fruity taste; however, when drinking wet coffee, you are tasting the coffee bean itself. In my opinion, this adds more of a smooth coffee taste, while the natural process is going to have more body, additional fruity flavors, and more of an acidic taste. Not only was this coffee at Cafe Comma the smoothest coffee I have ever tasted, but it continues to be consistent every morning I make myself a cup of coffee!! East Pole's website is below!!
